A quincho is a structure outside the house set up for entertaining and dining. Luis’ quincho has a brick fireplace bbq with an adjustable rack, smoker fire, and a separate pizza oven. There is also a sink, cooking range, bathroom, and a large dining area. Luis chose a variety of meats to grill and they were all outstanding. Santiago prepared grilled provolone balls which were crispy and delicious. Cecilia prepared a variety of salads and rolls and Patricia made tiramisu. Miguel brought wine from the southern most winery in Patagonia. We ate and enjoyed each other’s company for hours that afternoon…..-A
